In 1990, with the Coonwarra at its best, Penfolds produced another great wine in the tradition of the famous 1966 Vintage Bin 620 and 1982 Vintage Bin 820. Released on 8 August 1994 to commemorate Penfolds 150 years of winemaking in Australia, this wine named Bin 920 is a blend of the finest Coonwarra Cabernet Sauvignon and Shiraz of the vintage.
Featuring the traditional Penfolds depth of flavour, complexity of balanced oak and firm tannin finish, the wine correctly cellared will continue to develop for many years.
All Penfolds red wines are made to mature in the bottle and will continue to develop many years after release. Exact tannins and tartrates are not removed at the time of bottling, as it is these elements that help retain the flavour and settle as a crust in the bottle.
To fully appreciate a mature red you should decant the wine. Be careful not to disturb the crust. Pour the wine into a decanter in one continuous movement against a light, so you can stopwhen the sediment reaches the bottle neck. This can be done prior to drinking. Decanting allows the wine to 'breathe' sufficiently without loosing rich bouquet and flavours that have developed in the bottle.
